Sweet Vermicelli Pudding

Ingredients

  • 125g Vermicelli coils
  • 2 tblsp ghee or veg margerine
  • 1 litre milk (or soya milk of fresh or UHT kind)
  • 2 1/2 tblsp unrefined sugar
  • Good pinch of nutmeg
  • Good pinch of ground cardamon
  • 1 1/2 tsp Vanilla extract essence

Method

  • 1.Gently melt ghee (or marg) in pan on medium heat
  • 2.Break vermicelli coils with hands into pan and continuously stir until golden brown
  • 3.Add milk, sugar, vanilla and stir well.
  • 4.Keep stirring and Bring to boil on full heat.
  • 5.Reduce heat to between low and medium, so it bubbles away without overflowing
  • 6.Every 2 or 3 minutes repeat steps 4 to 6
  • 7.The consistency will become increasingly creamier and the vermicelli will have thickened
  • 8.Reduce to low heat
  • 9. Add nutmeg and taste. It should taste sweet with the mixed aromas of the spices
  • Add more sugar, nutmeg, cardamon or vanilla essence depending on personal taste

Notes

Serve into bowls and optionally top with some finely chopped pistachios, almonds and a swirl of soya cream
