Aromatic Indian Tomato Soup

Ingredients
- 1 Tin of Plum Tomatoes
- 50 ml water
- 6 cloves
- 4 cardamon pods
- 3 small pieces of cinnamon bark (2cm long strips)
- 1 tsp fresh chopped coriander
- 1 table spoon oil
- 3/4 tsp salt (more or less depending on personal taste)
- 1/4 tsp tumeric
- 1/4 tsp Asafoetida (Hing) powder
- 1 1/2 tsp Demarara sugar (or unrefined sugar)
- Soya Cream to garnish to personal taste
Method
- 1.Using a hand blender blend the tomatoes and water
- 2.Add the oil to a pan and heat the oil (full heat)
- 3.Add cloves, cardamon & cinnamon to the pan and fry gently until crackling/popping sounds can be heard
- 4.Lower heat to medium and add Asafoetida (Hing) powder
- 5.Pour blended tomatoes
- 6.Add salt, tumeric, sugar and the coriander.
- 7.Stir and taste – it should have a tangy bite and a taste a little sweet
- 8.Keep stirring and bring to boil.
- 9.Reduce heat to low and simmer for few minutes
Notes
You can add more salt, sugar to your personal taste. Also try adding some Finely chopped green chilli and ginger to make it a little more adventurous!
